Easy and Delicious Saturday Night Dinner at Home
So, it's Saturday night and the question was, should we go out or eat at home? While I love restaurants, I don't always enjoy the big price tag that goes along with it. It was also one of the most beautiful nights outside-80 degrees, sunshine and warm air means we get to set outside in our beautiful Colorado environment. What did we have?
One of my favorite easy meals:
Cedar Plank Salmon with Grilled Lemons

Roasted Blue, White, and Red Potatoes
Roasted Carrots
Yogurt Chive Sauce (the garden is full of chives right now)
All for the price tag of about $5.00 per meal.

Another side tip on cedar planks. You can buy them at most grocery stores for a hefty price tag of anywhere from $5-$10 for a couple of planks. I prefer to go directly to Home Depot. Ask for a piece of untreated cedar wood, have them cut up into pieces about 12 inches long. You will pay about $2.00 for a stack of planks that can be reused a couple of times. All you do is soak them for a couple of hours in water before placing directly on the grill. They impart an aromatic smell to the salmon and your fish doesn't get all torn up from being directly on the grill. It does take a little longer for fish to cook this way, so settle back and drink some wine while you wait!
