After graduating from the University of Nebraska in Lincoln with a B.S. in Nutrition and Food Service Management, Elizabeth attended her dietetic internship at Penrose St. Francis Healthcare System in Colorado Springs. She immediately started her career in foodservice management as a General Manager in the corporate dining environment. Managing the cafeteria at the corporate headquarters for Amazon.com in Seattle, WA was one of the highlights of her career.
After Amazon.com, she took a position with an amazing store in the Pacific Northwest called Metropolitan Market as a Product Specialist for the deli departments, creating recipes, choosing new ready to eat foods to sell and buying cheese, charcuterie and deli specialty items.
